This monkey butter is next level. No joke, I was totally surprised. You toss the ingredients in the pan, watch ’em cook, and if you’re anything like me, you’re probably saying “Eh, it’s just pineapple and banana, right?” But then once the bananas break down a bit and the sugar starts bubbling, you can’t help but get a little taste. The second mine finished simmering, I just couldn’t resist: I scooped out a spoonful, hot, and man, I was grinning.

So good! Literally, I’m smiling. And that’s saying something! Sweet and tart, with a buttery texture killer. How have I never made this before?!

It totally gives me banana split vibes. And let me tell ya, it’d be INSANE on ice cream. You know those juicy pineapple chunks you get in a banana split? That’s my favorite part-the combo of banana, ice cream, and pineapple all in one bite. So good! Pretty sure I know what I’m having for dessert tonight, maybe with a drizzle of chocolate syrup. Mmm…

The BEST Monkey Butter Recipe

This recipe is SO DARN EASY—just 5 ingredients! You can print the whole recipe at the bottom of the post, but here is the short version:

Bananas
Crushed Pineapple
Shredded Coconut
White Sugar
Bottled Lemon Juice
Check out these bananas I got! (Maaaybe I Photoshopped out a couple of brown spots… ????) But seriously, if you don’t get perfect ones, don’t sweat it. These were a tad under-ripe and still worked beautifully, and even a few spots won’t kill it—just go for it!

I wouldn’t go with overripe bananas for this, or it’ll turn out way too sweet.

Monkey Butter Recipe

I scoop up some ‘macaroon’ coconut from the bulk bin-it’s just ground-up, unsweetened coconut flakes. If you can’t find it, just toss a few tablespoons of regular coconut flakes into a food processor and pulse until they’re in small pieces.

Throw all of the ingredients into a big nonstick pan. Turn the heat up and bring it to a boil, stirring often.

Then you just turn the heat to low and let it simmer until the bananas break down completely and until the mix thickens it up-it takes about 15 to 20 minutes.

It’s basically like applesauce, just a bit thicker.

Like I said, this stuff is PERFECT with ice cream. You can even spread it on toast, or serve it up with pancakes or waffles. I’m telling you, it’d be awesome if you mixed some right into your pancake batter too!

The lemon juice keeps the bananas from turning brown, so it’ll stay good in the fridge for about 4 to 6 weeks.

Why I Love Monkey Butter Recipe

I love the Monkey Butter recipe because it’s such a simple way to give any dish a tropical twist. Just five ingredients–bananas, pineapple, coconut, sugar, and lemon juice–produce the most deliciously sweet and tangy spread that you could place on anything from toast and pancakes to ice cream. Also, it is easy to prepare, can stay weeks in the fridge, and freeze it for later. The best part is: The good part of this is that you can actually personalize it with your preferred add-ins like nuts or chocolate chips. It is a very interesting, must-try dish for anyone who likes fruits!
