How to Make Lemon Mousse Recipe:
- Grab a large saucepan and fill it with a few inches of water, then bring it to a simmer over medium heat.
- In a heatproof bowl, whisk together the 3 whole eggs, 3 egg yolks, 1 cup of sugar, lemon zest, lemon juice, and a pinch of salt. Set the bowl over the simmering water and keep stirring for about 10-15 minutes until the mixture thickens a bit.
- Once it’s ready, take it off the heat and let it cool for 15 minutes. Pour the mixture into a bowl and cover the surface with plastic wrap to prevent a skin from forming.
- Pour the mixture into the fridge and chill for at least 1 to 2 hours or until it is completely chilled.
- In a bowl mix whip the remaining 3 whites, for about a minute using the high speed. Add last remaining sugar, 2 tablespoons beat until stiff peaks, add the beaten egg whites, into the chilled lemon mixture.
- Pour the cream into another bowl and whip it on a high speed until you receive stiff peaks. Fold that whipped cream into the lemon mixture carefully.
- Chill the mixture at least 30 minutes before serving cold, and store leftovers in a fridge up to 5 days.

- Dig in with a dollop of whipped cream and some fresh berries on top.

6 large eggs
1 cup plus 2 tablespoons granulated sugar, divided
2 teaspoons lemon zest
½ cup fresh lemon juice (from about 3-4 lemons)
A pinch of salt
1 cup heavy whipping cream
Directions
- Fill a large saucepan with a few inches of water and bring that to a simmer over medium heat.
- In a heatproof bowl, whisk together 3 whole eggs, 3 egg yolks (set the whites aside), 1 cup sugar, lemon zest, lemon juice, and a pinch of salt.
- Then you set that bowl over some simmering water, continuing to stir with a wooden spoon for about 15 minutes until it’s sort of thickened up.
- Good, take it off heat and let it chill in the fridge for 15 minutes. Pour into another bowl and cover that plastic wrap over the surface and pop it in the refrigerator for at least an hour and half to two hours, cold.
- Next, crack open those 3 remaining egg whites and beat them with a mixer in a mixing bowl on high speed for a minute. Add the remaining sugar and continue beating until they become stiff peaks. Take those whipped whites and gently fold them into the cold lemon mix.
- Mix cream in another bowl and whip the cream until stiff peaks have formed.
- Fold the same whipped cream into the lemon mixture as well. It is ready to serve within 30 minutes; eat it cold, but fridge leftovers up to 5 days.
