Hot Pockets Recipe

Ingredients:

  • Filling:
    • Shaved sandwich meat of choice (e.g., turkey or ham)
    • Shredded cheese of choice (e.g., cheddar)
  • For the Dough:
    • 1 1/2 cups shredded mozzarella cheese
    • 1 1/2 cups shredded cheddar cheese
    • 4 oz cream cheese
    • 2 beaten eggs
    • 1 1/2 cups almond flour
    • 2 tsp xanthan gum
    • 2 Tbsp Everything Bagel seasoning

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Melt the Cheese:
    In a microwave-safe bowl, melt the mozzarella, cheddar, and cream cheese in 30-second intervals, stirring after each interval, until smooth.
  3. Mix the Dough:
    Using a mixer with a paddle attachment (or a hand mixer), add the beaten eggs to the melted cheese and mix well. Add almond flour, xanthan gum, and Everything Bagel seasoning. Mix until the dough is fully combined.
  4. Chill the Dough:
    Place the dough in a zip-top bag or wrap in plastic wrap, then refrigerate for 30-45 minutes to firm up.
  5. Roll Out and Cut the Dough:
    Divide the chilled dough in half. Place one half between two sheets of parchment paper and roll to about 1/4-inch thickness. Use a round cutter (such as a wide jar lid) to cut circles from the dough.
  6. Assemble the Hot Pockets:
    On each dough circle, add a small amount of mustard (optional), then top with shredded cheese and a piece of sandwich meat. Place another dough circle on top and press the edges to seal. Repeat until all dough is used. You should have around 10-12 hot pockets.
  7. Brush and Bake:
    Arrange the pockets on the baking sheet, brush with an additional beaten egg, and bake for 20-25 minutes, or until golden brown.
  8. Cool and Serve:
    Allow the hot pockets to cool slightly before enjoying!
