Ingredients:📋
8 oz lo mein noodles or spaghetti
2 tablespoons vegetable oil
1 lb chicken breast, thinly sliced
1 cup sliced bell peppers
1 cup sliced carrots
1 cup snap peas
1/2 cup sliced mushrooms
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1/4 cup soy sauce
2 tablespoons hoisin sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
2 green onions, sliced
Sesame seeds (optional, for garnish)

Cook the Noodles:
Cook the lo mein noodles or spaghetti according to package instructions. Drain and set aside.
Cook the Chicken:
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the thinly sliced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Cook the Vegetables:
In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell peppers, carrots, snap peas, and mushrooms. Cook for 3-4 minutes until the vegetables are tender-crisp.
Add Garlic and Ginger:
Add the minced garlic and grated ginger to the skillet. Cook for an additional 1 minute until fragrant.
Combine and Sauce:
Return the cooked chicken to the skillet with the vegetables. Add the cooked noodles to the skillet.
In a small bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, and sesame oil. Pour the sauce over the chicken and vegetables. Toss everything together until well combined and heated through.
Serve:
Garnish with sliced green onions and sesame seeds if desired. Serve hot.
